|½ small Eggplant , sliced|
|¼ each Red, Yellow and Green Capsicum , de-seeded and sliced in quarters|
|1||small Onion , sliced into rounds|
|2 tbsp||Olive Oil|
|3 - 4||Garlic Cloves , chopped|
|Black Pepper Powder|
|60 g||FunFoods Zer0Fat Dressing South West|
|2 Slices||Processed Cheese|
|1 no.||Focaccia Bread , slice it half lengthwise without cutting through and toasted|
In a bowl add, mushrooms, eggplant, capsicum and onion. Add 1 tbsp olive oil, garlic, salt and pepper to above vegetables. Toss gently.
Heat remaining oil in a griddle (medium flame). Place the vegetables on the grill and cook for 3-4 minutes. Gently flip veggies with a spatula when veggies start to soften and grill marks develop. Cook for another 3-4 minutes or until vegetables are cooked.
Preheat oven to 180°C.
On lower, half of the bread place above grilled veggies. Drizzle 2 tbsp dressing, top it up with cheese and bake in oven for 3-4 minutes or until cheese melts.
Drizzle remaining dressing on top and serve.
