100 g | Quinoa , soaked in water for 30 minutes |
1 tbsp | Olive Oil |
2 - 3 | Garlic Cloves , chopped |
1 | small Onion , chopped |
½ medium Carrot , diced (small) and boiled | |
30 g | Sweet Corn Kernels |
Black Pepper Powder | |
1 - 2 | Spring Onion Greens , chopped |
60 g | FunFoods Zer0Fat Dressing Zesty Orange |
Few Pomegranate seeds for garnish |
In a saucepan add water, salt and bring it boil. Stir in the quinoa, and then turn the heat down to low. Cover and simmer until all the liquid is absorbed, about 15 minutes. Use a fork to fluff and separate the grains.
Heat oil in a non-stick pan (medium flame) add garlic, onion, carrot, sweet corn and boiled quinoa. Sauté vegetables for 2-3 minutes and season it with salt and pepper.
Add spring onion, dressing and stir well. Take out salad in a bowl, garnish it pomegranate seeds and serve.
