In a bowl add mix veg and coriander leaves. Mash the veggies using potato masher, mix well and make two round shape balls.
Shape up the balls like cutlet and keep it aside. In a bowl, add refined flour, water and salt. Mix well until smooth mixture is formed.
Coat veg cutlet in above batter and then roll in breadcrumbs from all sides. Place cutlet in refrigerator for half an hour.
Heat oil in a kadhai and deep fry cutlet until light golden brown.
For Assembling- Spread mayonnaise on both halves of the bread. Place lettuce leaves on lower part of the bread, top it up with cucumber slices, tomato slices, veg cutlet, olives and jalapenos. Cover it up with upper side of the bread and press slightly. Serve.
