In a bowl add, mushrooms, capsicum, potato, beans, 2 tbsp oil, salt and pepper. Toss gently.
Heat remaining oil in a griddle (medium flame). Place the vegetables on the grill and cook for 3-4 minutes. Gently flip veggies with a spatula and when veggies start to soften and grill marks develop. Cook for another 3-4 minutes or until vegetables are cooked.
In a bowl add grilled vegetable, cherry tomatoes and cheese garlic dressing. Mix well and serve.
