
Heat oil in a non-stick pan (medium flame) add spinach, sweet corn, salt and black pepper. Sauté for 2-3 minutes or until water from spinach dries out. Keep it aside and let it cool down.
In a bowl add sautéed spinach and garlic mayonnaise. Mix well.
Spread above mixture evenly on a bread slice and club it with the other bread slice. Heat butter in a non-stick pan (medium flame) and pan fry sandwich from both sides for 1-2 minutes or until light brown. Cut and serve hot.
