Slit chilli peppers from just below the stem down to the tip of the chilli (be careful not to slice through to the other side).
In a bowl mix corns, beans, onion, garlic mayonnaise, coriander leaves and mix well.
Open chillies, remove seeds and hollow chillies from inside.
Heat 1tbsp. of oil in a non-stick pan. Shallow fry chilli peppers for 2 minutes or until slightly crisp from all sides.
Fill vegetable and mayonnaise mixture inside the chilli peppers and serve hot.
